Homemade Lasagna

Lasagna is a can't go wrong dinner in our house.  It can be made the day ahead or in the evening after I get home from work.  I use the noodles that are ready to use out of the box, makes it so much easier than boiling.  I have played around with the recipe from time to time but mostly I stick with this one.

1 lb lean ground beef (or ground turkey)
1lb sweet sausage (taken out of their casings if you are using links)
32oz pasta sauce (Ragu or whatever you like)
1/2 cup water
2 eggs
4 cups shredded mozzarella cheese
2 cups shredded Parmesan cheese
15 oz ricotta cheese (light)
15 oz skim small curd cottage cheese
1 tsp basil (or Italian seasonings)
1 tsp dried parsley
1 box of oven-ready lasagna noodles
Preheat oven to 350

Brown the ground beef and sausage in saucepan, drain.

Mix the pasta sauce with the meat/sausage and stir in the water.

In a separate bowl mix the eggs with the ricotta and cottage cheese, add 2 cups of the mozzarella cheese and 1 cup Parmesan cheese.  Mix in the basil and parsley.

In a 9x13 scoop some of the meat/pasta sauce mixture on the bottom. Place a layer of the noodles, top with the cheese mixture, then sauce.  Repeat until you have the last layer of sauce then sprinkle the remaining mozzarella and Parmesan cheese on top.

Make sure you put a baking sheet under the lasagna in the oven in case it bubbles over.
Bake for 45min until top is starting to get brown.  I like mine a little crunchy on top so I may leave it in for a little longer.  Place this in the oven with your Four Cheese Garlic Bread for the last 15 minutes.

And this is the finished product---YUM!
